WARNING! Serious PB Lovers Only: Chocolate Peanut Butter Poke Cake

I have been wanting to make this one for a WHILE – but I knew that it wasn’t something I could just randomly make for my husband & me – it looked insanely intense – so I waited until we had an occasion to bring a dessert to. Luckily, our friend recently celebrated his birthday, so I decided to whip this up to celebrate!

Chocolate Peanut Butter Poke Cake

INGREDIENTS
FOR THE CAKE
1 box devil’s food cake, plus ingredients called for on box
2 c. peanut butter, melted
1 c. chopped Reese’s Peanut Butter Cups
1 c. Reese’s Pieces
FOR THE PEANUT BUTTER FROSTING
1 c. peanut butter
10 tbsp. unsalted butter, softened to room temperature
2 c. powdered sugar
2 tsp. pure vanilla extract
1/4 tsp. kosher salt
2 tbsp. heavy cream

DIRECTIONS
Bake cake: Preheat oven to 350°. Line a 9″-x-13″ pan with parchment paper and grease with cooking spray. Prepare cake batter according to package instructions and pour into prepared pan. Bake until a toothpick inserted into the middle of the cake comes out clean, about 25 minutes. Let cake cool completely.
Using the back of a wooden spoon, poke holes all over cake. Pour melted peanut butter over the entire cake, filling the holes. Set aside.
Make frosting: In a large bowl, using an electric mixer, cream together peanut butter and butter. Add powdered sugar, vanilla, and salt and beat until light and fluffy. Gradually beat in cream to loosen frosting, if needed.
Spread frosting all over the top of the cake. Top with chopped Reese’s Peanut Butter Cups and Reese’s Pieces.

As I had predicted, this cake was INTENSE – the peanut butter both in the cake and on top in the frosting is super rich, and the chocolate cake flavor almost gets lost alongside all the PB-ness (which – for me is no issue, I don’t really care for chocolate cake by itself, but if you’re looking to have that choco-y flavor, it’s really not there in this one)

That being said, OF COURSE I loved it, and so did my husband, son and our friends – the fluffy frosting against the toppings and cake is a great blend of textures, and while it may be intense, it’s also tasty!

I HIGHLY recommend you have some milk on hand when you go to tackle this bad boy – trust me, it’s the perfect compliment!

John’s Cookbook – Page 2 – Ice Cream In A Bag

I came across this “Ice Cream In A Bag” somewhere – Facebook maybe? And I remember making it when I was a kid – at daycare we did it a few times, and I even was able to recreate it on my own at home. I figured my son would enjoy it – as it’s easy, and doesn’t require any baking/oven time, OH – and you get to SHAKE a bag for a LONG TIME! So here we go, with the next page of John’s Cookbook – Ice Cream In A Bag!

Ice Cream In A Bag
INGREDIENTS
1 c. Milk
2 tbsp. sugar
1/2 tsp. pure vanilla extract
3 c. ice
1/3 c. kosher salt
Toppings of your choice

DIRECTIONS
-In a small Ziploc bag, combine milk, sugar and vanilla. Push out excess air and seal.
-Into a larger Ziploc bag, combine ice and salt.
-Place small bag inside the bigger bag and shake vigorously, 7 to 10 minutes, until ice cream has hardened.
-Remove from bag and enjoy with your favorite ice cream toppings.

Chef John enjoyed this a lot – it was easy and a fun way for him to fully make something basically all on his own!

The only change I made was that the original recipe called for half and half, but I opted to use 2% milk instead, turned out fine. Additionally – might I offer a Pro Tip – double bag it. All of it – the ice cream, the ice itself – double it up. Because no matter how strong your baggies are, they will probably leak at some point after several minutes of vigorous shaking (ours did – and they were name brand and everything – eek!). So learn from my messy mistakes and double it up before you even begin – oh – and Happy Shaking!

Easy, No Bake “Reindeer Bait” Is The Perfect Christmas Treat

These days, my Facebook feed is mostly composed of food videos – you know the ones – that have cutesy music in the background and take you through a recipe in under a minute and make it look not only delicious – but easy and super enticing? I try not to be so easily taken in by a flashy video – but I have to admit – I love a good recipe – and enjoy watching these types of videos. I don’t often end up making them in real life, but this one was too good to pass up. I had already done a ton of Christmas Cookie Baking – so the fact that this one didn’t involve the oven sealed the deal for me – to the store I went to pick up the few ingredients I didn’t already have on hand for this delicious Reindeer Bait!

Ingredients
3 c. corn chex
2 c. wheat chex
2 c. mini pretzels
2 c. mini marshmallows
1 c. red and green M&Ms
20 oz. white chocolate
Red and green sprinkles, for garnish

Directions
-In a large bowl, mix together Corn Chex, Wheat Chex, pretzels, mini marshmallows, and M&Ms.
-Melt white chocolate and pour over mixture. Stir until fully coated.
-Transfer mixture to a parchment-lined baking sheet or dish and top with sprinkles, then refrigerate until firm, 1 hour.
-Break up into bite-size pieces and serve
**There should be a final step of this recipe – “Try not to eat the whole thing in one sitting”**

I picked this recipe in part because I knew it was one my son could easily help with – he really enjoyed measuring the ingredients and stirring them up

While he stirred the dry stuff, I melted the white chocolate and then mixed it all together into a gorgeous blob

Adding the sprinkles was his favorite part – he kept asking “now?” with the sprinkles poised over the pan. He did a great job making it extra festive

The finished product was enjoyed by all!

This recipe was easy to put together and the end result was delicious – the only thing I changed was I added some Craisins I happened to have on hand, but you could really add just about anything to it – nuts, raisins, Reese’s Pieces instead of M&M’s, or you could change up the candy and sprinkle colors depending on the season/holiday you’re making it for

Well – it’s Thursday – and I seriously doubt this “Reindeer Bait” will make it to the weekend – much less Monday (Christmas) – so I hope the reindeer don’t mind if we leave them carrots and extra cookies instead!
