Loaded M&M Oreo Cookie Bars = Cookie Heaven

What is better than cookies? Well, not much if you ask me – but I would say one thing that’s better than cookies is MORE COOKIES. I’m thinking like a cookie bar with cookies baked inside – now that’s basically perfection for a cookie lover like myself. I had saved the recipe for these loaded Oreo M&M cookie bars a while ago – and now that I have made them, I have no idea why I waited so long – as they were easy, tasty – and did I mention – cookie in cookie?

Loaded M&M Oreo Cookie Bars

Yield: 8×8 pan (9-12 generous squares)
Prep Time: 5 min
Cook Time: 20-25 min
Total Time: 30 min

Ingredients
1/2 cup unsalted butter (1 stick), melted
1 large egg
1 cup light brown sugar, packed
1 tablespoon vanilla extract
1 cup all-purpose flour
18 Oreo Cookies, coarsely chopped (I used Oreo Chocolate Birthday Cake Sandwich Cookies
about 1/2 cup M&M’s (I used plain, use your favorite flavor or other chopped candy)

Ingredients = assembled. Let’s bake.
Oh – and – I’m making a double batch. Because, well – why NOT?

Directions
-Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
-In a large, microwave-safe bowl melt the butter, about 1 minute on high power.
-Wait momentarily before adding the egg so you don’t scramble it. Add the egg, brown sugar, vanilla, and whisk until smooth.

-Add the flour and stir until just combined, don’t overmix.

-Stir in the Oreos.

-Turn batter out into prepared pan, smoothing the top lightly with a spatula.
-Evenly sprinkle the M&Ms over the top, lightly pressing them down with your finger or a spatula.
-Bake for about 20 to 22 minutes, or until done based on add-ins used. Top should be set and edges slightly firm. A toothpick inserted in the center (if you can find a bare patch to test) should come out clean, or with a few moist crumbs, but no batter.

-Allow bars to cool in pan for at least 30 minutes before slicing and serving. Bars will keep airtight at room temperature for up to 1 week, or in the freezer for up to 6 months.

NOTES: I decided to add some M&M’s into the batter too (in addition to putting them on top). I used peanut M &M’s – which tasted great but was kind of messy when it came to cutting them – the candy kinda fell apart – so I would recommend plain using plain or even mini M&M’s instead

In the original recipe, she states that you can really use anything – any cookies or mix in’s – so it might be fun to experiment with these – mini peanut butter cups and peanut butter oreos, chips ahoy cookies and cut up snickers…I could go on and on – but you get the idea. No matter what you use they will turn out delicious!

Potluck Crowd Pleasing Desserts

Summer is the season of picnics and get togethers – most of which involve delicious FOOD! Whenever I am asked to bring a dish to pass to a potluck picnic, my mind immediately goes to desserts (as it does pretty much 24/7)….

So if you decide you want to bring a dessert to your next get together, then I suggest you consider these Characteristics of a good potluck/picnic dessert: It should be easy to transport, it preferably doesn’t need to be refrigerated, it won’t easily melt, is hand held, and most importantly – it has to be tasty!

I personally prefer to bring something like a cookies or cookie bars, I find they fit all these characteristics, and there are so many different recipes to try!

Here are my top Potluck Dessert Picks:

Monster Cookies – So many awesome tastes all in one! These giant cookies have a lot going on – M & M’s, Rice Krispies, oats, nuts, chocolate chips, peanut butter chips, peanut butter flavor – but they all work together well and create a delicious cookie that will please everyone!

The Brown Sugar Blondie – Think of a sugar cookie, but in a car, and with delicious M&M’s added to it – yum! This one can even be themed, since they make M and M’s for different seasons/holidays, so you can use those fall/Christmas/Easter/Valentine’s Day M&M’s, or you can use the different flavored ones too, like the peanut butter ones (my personal fave!), or dark chocolate would be fun in here too

S’more Bars – Graham cracker cookie make up the top and bottom of this treat, and are separated by a layer of chocolate and one of marshmallow fluff – this is a great alternative to making actual s’mores, and is great in the summer or in the winter (when you are longing for something, ANYTHING that will remind you that warmer weather will be arriving soon!)

Funfetti Cookies – These are fast, cheap, and easy – you use a standard funfetti boxed cake mix, add 1/3 cup of oil & 2 eggs, form into balls on cookie sheets, bake for 6-8 minutes, and voila – cake cookies!
*Quick Tip – if you don’t have the Funfetti cake mix at home, you can use almost any standard size/flavor cake mix and turn them into
Cookies using that same recipe

In fact, now that I’m thinking about it, I just may whip up some s’more bars for a picnic I am headed to next weekend! What about you – what do YOU like to bring to a picnic or potluck party? Are you a dessert person too?

Simple. Delicious. Perfect – The Brown Sugar Blondie

When I find myself with some extra time, one of my favorite things to do is bake something new. There’s nothing like researching and finding the perfect recipe, and then bustling around the kitchen measuring and mixing and putting together something new and delicious to try and share with the ones you love.

When I came across this M&M Brown Sugar Blondie Recipe, I was immediately sold –  not only are these are fast and easy to whip up, but best of all – you likely have all the ingredients in your pantry right now (and if you don’t have M & M’s in your pantry right now, first of all, why NOT? To remedy this I recommend a trip to BJ’s/Sam’s/Costco and a cart full of giant party size bags of them. It’s practically a necessity!)

Brown Sugar M&M Blondies

Ingredients

1 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter
1 cup packed brown sugar
1 egg
1 tablespoon vanilla extract
1 cup to 1 1/3 cup M&M’s

Directions

Preheat oven to 350 degrees F (180 degrees C).

Mix together flour, baking powder, baking soda, and salt and set aside

Melt 1/3 cup butter. Add 1 cup firmly packed brown sugar and mix well. Cool slightly

Add egg (beaten) and vanilla and blend well

Add flour mixture, a little at a time, mixing well

Mix in 2/3 cup M&M’, and spread in a greased 9 x 9 x 2 inch pan. Sprinkle 1/3 to 2/3 cup M&M’s on top

Bake for 20 to 25 minutes. Store in airtight container at room temperature

My Only Alteration to this recipe is I tend to add more M & M’s….closer to 1.5 cups total – a little more chocolate never hurt anyone, right?

BrownSugarBlondies 012I prefer them slightly warm (about two hours post oven seems to be a good time to get them while they are hard enough to cut, but warm enough melt your heart. The taste is like a sugar cookie only more dense and brown sugary, and those M & M’s add the perfect chocolate touch!

And since M and M’s come in many varieties (both flavor wise AND seasonal), you can make these again and again, no matter what the holiday/occasion. I am thinking I will try mine with peanut next. Or maybe those cute Easter M & M’s? So many possibilities from this one simple tasty treat!
